Course Description

In 1492 after Columbus made landfall in the Caribbean began the greatest transfer of plants, animals, people and diseases in human history. For over 200 years there was a steady exchange between the Americas, Europe, Africa, and Asia that revolutionized people’s diets, work technology, and health in both positive and negative ways. In this one-session course we will focus on the movement of the foods, plants and animals that were part of this larger exchange and that helped shape the world we inhabit today.
